Chickweed-Garlic Green Dip, from The Boreal Herbal
High in antioxidants this dip has many uses. It’s great as a condiment on almost anything! I like it as a dip for crackers and carrots, and as a favourite potluck offering.

bunch chopped chickweed
1⁄4 cup (60 mL) chopped garlic
2 tablespoons (30 mL) apple cider vinegar 1⁄2 teaspoon (2 mL) sea salt
Olive oil to cover
Mix chopped raw chickweed, garlic, vinegar and salt together in a blender; blend until smooth, and pour into a bowl. Cover with olive oil to prevent browning.
Stir before serving, eat, and enjoy. Store in airtight container in the fridge.
